RECIPE: Lemon Grass Chicken Soup
I used turkey from my T-day leftovers instead of chicken to make the broth and to provide the meat. I prepared the broth according to the directions, simmering with the lemongrass, ginger, and chilies for about 30 minutes while I made brown rice....

RECIPE: Thai Fish Cakes With Hot Peanut Dip
The fish cakes by themselves were delicious and the hot peanut dip as well but I didn't like them together. We end it up using Mae Ploy chili sauce diluted in a little bit of rice vinegar for the dipping sauce.
