RECIPE: Skinny Mashed Potatoes
Guess what? My meat and potatoes guy loved these! So I didn't feel the need to mention the lack of butter or milk! (Of course, he still had to put gravy on them...!) I served these with Crispy Baked Chicken Strips and fresh corn for a perfect "comfort-food"...

RECIPE: Pop's Fried Spaghetti
This was given a two thumbs up from my crew! :D I used a low fat butter and added garlic, pepperoni, and some parmesan/romano mix on top with no added salt and pepper and it was great! Thanks, 2Bleu, for another great dinner dish!

RECIPE: Corned Beef and Cabbage in Guinness
I didn't particularly like this dish. The guinness/chocholaty flavor overpowered the corned beef.
