G'day, my mother who was Polish used to make pancakes from grated potato, egg and flour, shallow fried in oil, but I can't remember the Polish name that she used for them. I can remember that they were delicious however, and that as kids we often requested them.

RECIPE: Sweet Potato Casserole
This recipe was wonderful. I used a 40 oz. can of sweet potatoes and used 1/2 cup butter in both parts. I baked this in a Pyrex deep dish 8X10. It was delicious. My kids loved it. This recipe is a keeper. Thanks for sharing.
