I'm a grad student and also teach at two different schools, so I need some fast/easy recipes. I try to eat vegan, and most of my creations are also gluten-free because my husband is Diabetic/Celiac. I don't post any recipes I have not personally tried and liked.

My personal motto is that delicious comfort food can be healthy too!

I collect vintage cookbooks (like the Jello Salad Selector), mostly for novelty's sake, as well as vegan cookbooks.

My favorite restaurants are Local Burger in Lawrence (healthy fast food for vegans, carnivores and celiacs alike) and Eden Alley in Kansas City (vegetarian heaven). We also really like the Blue Koi in KC (very vegan-friendly Chinese fusion, and they have a gluten-free menu). I want to try the new vegan restaurant in KC, Seed Cafe. PlayFood vegan cheese spreads are made locally, and are delicious. Central Soyfoods tofu is my other favorite local product.
