Truck Stop Buttermilk Pancakes

Absolutely the best buttermilk pancakes!!! I make this on Sunday's and have pancakes all week. Batter will keep in the fridge for 2-3 days. (To make this easier to reduce # of servings for "whole eggs" because I don't know how to divide a 7/8 egg!!! If you enter 13.9 = 7 servings, 9.2 = 5 servings 4.4 = 2 servings) Adapted from allrecipes.com

SERVES 12 , 24 -36 pancakes (change servings and units)

    In a large bowl, whisk together the eggs, milk, butter and buttermilk. Combine the flour, baking powder, baking soda and sugar; stir into the wet ingredients just until blended. Adjust the thickness of the batter to your liking by adding more flour or buttermilk if necessary.

    Heat a large skillet over medium heat, and coat with cooking spray.

    Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side. Continue with remaining batter.

I originally saw this on another recipe site. This is a great recipe for buttermilk pancakes. I make these about once a week or so. I cook up all the pancakes and freeze for the kids to heat up in the microwave for breakfast or snacks (I have a 6 year old carbaholic!) These are just like the ones you find a "greasy spoon" truckstops....they always have the best food!
