Cheesy Spinach and Beef Casserole

Finally, a way to get even your pickiest eaters to eat their spincah! This is a filling and quick casserole that can easily be made low fat if you use ground turkey and low-fat cheese. Serve with a green salad and some french bread and dinner is served!

SERVES 6 (change servings and units)

Ingredients

    In a large wok or frying pan heat oil and cook onion and garlic in a small amount of oil until transparent.

    Add spinach and cook until wilted.
  3. 3
    Set aside.

    Brown ground beef and season with garlic salt, salt and pepper to taste.

    Set aside.

    Combine cooked pasta, spinach, ground beef, cheese (amount to your preference, my family likes it cheesy!) and soup.

    add salt and pepper to taste.

    Place in a large baking dish, cover in a layer of shredded cheese.

    Cover with tin foil and place in a 350 degree oven for 30 minutes.

    Uncover and place back in oven for another 10 mintues.

Good casserole, different from other spinach pasta dishes I have tried. Easy to put together, I followed the recipe except adding a half can of milk as my mix was a little dry. I also had frozen spinach, used a 10 oz box defrosted in the sink. Might have been a tad too much spinach, next time I will use 3/4 box so the spinach doesn't dominate the flavors so much. But very good, mother in law asked for the recipe so she could make at home! DH asked I make it again, so its a winner.

    This was a really good quick meal! I used whole wheat penne and a combo of monterey jack and cheddar. I put it in a sprayed 9 x 13 pan, followed directions for baking and accepted the compliments. It had no strong flavors, but my sons used their favorite hot sauces to spice up. We all agreed it was a keeper! Thanks.

    Excellent dish! Will definitely add it to our "keeper" file. I did not know what box size pasta to use. I cooked up 16 oz. and ended up using half in the recipe. I used a bag of already cleaned spinach.

    This is a great way to get your family to eat their spinach. This casserole is awesome! I used a lot of cheddar cheese in mine and it turned out great. Thanks for a wonderful recipe!
