I got this copycat recipe from Algy's Recipe Exchange.

SERVES 6 (change servings and units)

Ingredients

    Saute garlic and onion in 2 Tbls. butter in a large skillet over medium heat until tender.
  2. 2
    Stir wine and lemon juice into skillet, increase heat to medium high, and simmer to reduce by half.
  3. 3
    Reduce heat to low and stir in cold butter, one slice at a time.
  4. 4
    Stir in tomatoes, basil, kosher salt, and white pepper; remove from heat; set aside.
  5. 5
    Brush chicken breasts with olive oil and sprinkle with salt and black pepper.

    Grill chicken over hot coals 15-20 minutes, or until cooked through.

    A couple of minutes before chicken is done, place equal amounts of cheese on each breast Spoon prepared sun-dried tomato sauce over chicken.

OMG! This was the absolute BEST! It tasted just like the Carrabba's recipe. Thank you for posting this! I followed the recipe to a "T" and it was yummy!

    I loved this when I had it at Carrabbas and now I make it all the time. I love to use a whole lot of shallots and everyone else seems to love it too. I also think it's a lot more salty at the restaurant, it's way better when you make it yourself!

    It's the absolute best! I moved and there isn't a Carraba's near by so this is the next best thing!! Yummy!! The whole family loves it!! If I am short on time I use my George Forman to cook the chicken. It doesn't have the charcoal taste but it does the trick! Happy Eating!

    The first time I made the recipe, I followed it to the letter and it came out great. However, I usually make things low fat, so the next time I used all chicken broth in place of the 2/3 C butter. I just added about 1T to finish the sauce at the end. It was just as good as the first time, and much healthier.
