Caribbean Spiced Roast Chicken

I haven't made this yet but am keeping it here for safe keeping

SERVES 4 (change servings and units)

Ingredients

    Preheat oven to 325 F or 165°C.
  2. 2
    In a small bowl combine lime juice,rum and brown sugar. Set aside.
  3. 3
    Mix together all the spices. Place chicken in a roasting pan and Brush with the oil then rub in the spice mixture.

    While chicken is roasting baste with the juice, rum ,sugar mixture every 15 -20 minutes.

    roast for about 90 minutes or until meat thermometer reads 180 when placed in the thickest part of the thigh or juice run clear.

    Allow to rest for 10 minutes before carving.

This was fabulous !!!! I didn't change a thing. Did it on the rotisseri on the BBQ. This is a keeper for me.

    This is one good recipe. Even though it was below zero, it was great! I only used 2 chicken breast and halved the recipe. Served it with Carribean Rice and Beans Recipe # 127490 and Fruit Salsa and Cinnamon chips recipe # 53594.

    I stumbled across this recipe while looking for a way to cook a chicken to impress a dinner date I had coming over. It was easy to make (I'm a bachelor who usually eats take out) and came out wonderful! I've used it every time I have a date over that I need to impress. Thanks!
