Well I don't think I would've thought of making tomato soup like this, but I will certainly be making it again! A wonderful variation on condensed tomato soup--and just as easy! I used a tablespoon (maybe a little more) of the tube ginger I get in the produce section of the supermarket.

I just love tomato soup and, in fact have a whole cookbook (Soups: Tomato Soup . . . Mm-mm, Good!) devoted to it. This one is spectacularly easy and an interesting combination of flavors that work, a combination that never would have occurred to me. Thanks, Stephanie, for a real find!
