Brownie Butternut Pie

A crustless pie with a nutty, toasty flavor, topped with whipped cream. It's a most requested recipe from Luby's restaurant classics. You can also substitute canned or frozen whipped topping.

SERVES 8 , 1 pie (change servings and units)

    Heat oven to 300 degress & lightly grease a 9" pie pan.
  2. 2
    In a large mixing bowl, beat egg whites,baking powder until soft peaks form then add cream of tartar, beating constantly.

    Add 1 cup sugar (a tablespoon at a time) beating constantly until stiff peaks form,then using a rubber spatula fold in graham crackers and pecan pieces & spoon into pie pan.

    Bake 30 minutes or until knife inserted comes out clean, cool completely.

    In a chilled bowl, beat cream just until it begins to thicken add remaining 1/4 cup sugar & vanilla, continue beting until stiff peaks form.

    Top cooled pie with whipped cream and sprinkle with pecans, refrigerate until served.

Hey.. no crust ( I don't like making crust) I made this for pre-thanksgiving desert and think it will be perfect. Full of rich flavor and quick and easy. thanks bakinbaby
