Broccoli Cheese Soup for Two

Feeling under the weather, and starving, I mixed up a batch of "cold remedy" soup! With garlic and cayenne pepper, it is sure to chase away the shivers!! Ready in 15 minutes!! I like to top it with garlic croutons Recipe can be easily doubled or tripled.

SERVES 2 , 2 bowls (change servings and units)

    Steam broccoli in microwaveable bowl with 1/4 cup water, for about 3-5 minutes. Cool a bit, mash with a fork.

    In a small saucepan, melt oil and butter.
  3. 3
    Saute onion on low heat, with salt and pepper for 2 minutes, add garlic, stir in flour to make a roux. Slowly add milk, stirring constantly. Add mashed up broccoli.

    Add cheeses, and cook until it thickens. Sprinkle with desired cayenne pepper.
  5. 5
    You may wish to add a splash of worcestershire sauce for an added zip!

    If you dislike cheese whiz, use anextra cup of shreeded cheddar.

    I quadrupled the recipe and used velveeta cheese and cheddar cheese. I also used half and half and whipping cream instead of milk. The soup was delicious. I used four cups of broccoli but it could stand about another 1 or 2 cups since it is mashed before putting in the liquid. Very easy recipe. I will definitely make again.

    This was excellent soup! Very quick, easy, and delicious. Thank you for sharing, grammabobbie. I will be making this often and have stored it in my "keepers" file. I didn't change a thing.
