This recipe is good and fast. Served with salad it makes a great filling meal on a busy night.

SERVES 4 (change servings and units)

Ingredients

    Preheat oven to 400 degrees.

    Spray square 8x8 baking pan with pam (the garlic one is good).
  3. 3
    Line pan with layer of corn tortillas.
  4. 4
    Top with 1/3 sauce, cheese, chilis, and onions.
  5. 5
    Top with second layer of tortillas.
  6. 6
    Top with second layer of 1/3 sauce, cheese, chilis, and onions.
  7. 7
    Top with final layer of tortillas.
  8. 8
    End with final layer of 1/3 sauce, cheese, chilis, and onions.

    Bake until bubbly.

    You can use green sauce and 2 cups cubed chicken.

    Or black beans.

    Or ground beef seasoned with taco mix.

Quick, easy, and very good! I used 10 flour tortillas and went without the green onions. Topped with sour cream and guacamole. Served with Rachael Ray's Black Bean and Corn Salad - http://www.recipezaar.com/205326 Next time I will add chicken to the recipe. Thanks for sharing.

    Very good and very easy. I added black beans and corn the first time and added chicken to the mix the second time. This is a nice versatile dish. I have to say though, the recipe is only as good as the enchilada sauce, a good sauce makes a big difference.

    Delicious! I added a can of blackbeans and about 1.5 cups of frozen corn, which a mixed together and seasoned with cumin and chili powder. It was out of this world!

    Excellent & Easy! What more could I ask for?!? I did take a few liberties according to our families taste. I used flour tortillas and omited the green onion. I also added a pound of ground beef to the mix to make it a little more substantial for my husband. So...I guess I did change it a bit, but that's what makes a great recipe - adaptability!
